Directional Ice Making Instructions

Directional Ice Instructions.  Currently a minor obsession at Oude HQ and what a difference it makes to the look and taste of the drinks.  I'm currently embracing the chaotic iceberg style of cube, but cutting them into perfect shapes is also fun.  

Instructions
​1) Fill a cooler (I've used a Coleman 4L) with 3L of hot water.



​2) Place the box in the freezer for 24 hours and then remove.  The ice should be frozen on the top but still be liquid underneath.  Like a real iceberg!



​3) Remove the ice from the cooler.  I wait 5 minutes and them tip the box up over the sink or in a clean tray to catch the water.  In my photos I froze the water for longer to show how the impurities and air bubbles move to the bottom of the ice.  If you take the ice out earlier the impurities will be in the liquid and your ice will be clear.



​4) Let the ice "temper" by leaving it alone for 10-15 minutes, this makes is easier to work with and prevents cracking.  I got a bit impatient in this photo shot and started too early!  You will see my ice broke into shards......resist the temptation!


​5) Take a serrated knife and score the ice block where you want the breaks to be. Then with the knife on the longest edge score lines give the back of the knife a sharp tap with a wooden rolling pin.  The block will then split off. If you've tempered the ice correctly this will be surprisingly easy.



​6) Repeat the process until you have the size of cube you like.

​7) Put your amazing ice cubes in a zip lock bag in the freezer.

​8) Become obsessed with doing a better and better job next time and repeat the process with an Oude and Tonic as a reward 🤣

​And be careful!  The ice will become slippery. Holding the ice block with a clean tea towel is a good idea when you start
