We use only the finest organic oranges, juniper and English coriander in our Dry Gin. Using fresh rather than dried citrus gives Oude Dry Gin a wonderful depth of flavour and smoothness. We prepare each orange by hand prior to distillation, taking great care to remove all traces of the bitter pith. We waste nothing, using both the flesh and the zest. We could do it faster with dried peel, but it’s true what they say about good things and those who wait. At Oude we consider the extra time an investment and our reward is a quality, world-class, gin.
A key factor in the production of Oude Dry Gin is our use of "Verity". This next-generation, vacuum still, allows us to distil at much lower temperatures than traditional gins. The process locks in the divine scents and essence of our ingredients resulting in a fuller, flavoursome gin.
We distil each botanical separately, over differing times, temperatures and pressures, to extract the best of each ingredient in every bottle.
Next, calm and steady hands blend the separate distillates before slowly diluting the mix to bottle strength. This ensures the precious liquid reaches its full potential.

Each bottle ships with a unique handwritten label, batch number and our wood-topped cork stopper and a biodegradable seal.
Each batch is limited to just 100 bottles.
Made in the heart of the Cotswolds
Oude is made on the banks of the river Coln on the site of an ancient mill house, old when it found its way into the Domesday Book of 1086. Surrounded by stunning countryside, it is an inspirational, magical place where people have worked the land for over a thousand years. We like to think that Oude will one day add to the amazing history of the mill and its land.

How would we do it?
Our tale began as an animated discussion over the family dinner table in 2019, but unlike other debates, it refused to dissipate.
Soon, the idea became a concept and before long a plan. In 2020, that plan found a home and the first stop on the journey we find ourselves on today. I still remember to this day how the conversation went and despite the many opinions and ideas shared that day, there were only two factors on which we all agreed.
The perfect gin could only be made with absolute love and without compromise.
After countless hours of research, testing and trial productions we settled on blending ancient techniques, attention to detail, modern technology and the finest ingredients to produce Oude Dry Gin.
As we produce our spirits in The Old Mill we felt that calling our business Oude, the Dutch word for Old, reflected both our heritage and the traditional bithplace of Gin.....altough the Italian monks from the 11th century might disagree...that's a story for another day!
Treading Lightly
Housed on a site inhabited for over a thousand years we realise we are only custodians of the land before we hand it over to the next generation. At Oude, we use recycled glass bottles and wood-topped cork stoppers. Our vacuum still uses a fraction of the water and energy of traditional copper stills and we strive every day towards a zero waste policy. Most recently we’ve begun to make our own beautiful marmalade as a by-product of Oude Gin.
